When you pick up a bag of speciality coffee, you’ll often see terms like light roast, medium roast, or dark roast. But what do they actually mean? And how do they affect the flavour in your cup?

What Is “Roast Level”?

Roast level describes how long and how hot green coffee beans are roasted.
As beans progress through the roast, their colour, density, flavour and aroma all change.

Generally, roasts fall into three categories:

  • Light roast

  • Medium roast

  • Dark roast

But within those are subtle gradients, and each one tastes unique.


Light Roasts: Bright, Complex & True to Origin

How They’re Roasted

Light roasts are heated until just after the first crack, a popping sound made as moisture escapes and the beans expand.
Temperatures typically range from 195°C to 205°C, and the bean remains relatively dense and dry on the surface.

Roasters stop the process early to preserve delicate acids and the coffee’s natural characteristics.

How They Taste

Light roasts highlight origin flavours, what the bean naturally offers based on variety, altitude, and processing method.

Typical notes:

  • Citrus, apple, stone fruit

  • Floral aromas

  • Tea-like clarity

  • Bright or sparkling acidity

  • Pour-over (V60, Kalita, Origami)

  • AeroPress

  • Filter machines

  • Black coffee drinkers who enjoy brightness and complexity


Medium Roasts: Balanced, Sweet & Versatile

How They’re Roasted

Medium roasts develop slightly longer, hitting higher internal temperatures, usually 210°C to 220°C, but stopping well before second crack.
At this stage, sugars begin to caramelise more deeply, balancing acidity with sweetness.

How They Taste

Medium roasts tend to be smooth, rounded, and flexible.

Typical notes:

  • Milk chocolate, caramel, toffee

  • Red berries or soft fruit

  • Nutty undertones

  • Balanced acidity and sweetness

Best For

  • Cafetières / French press

  • Drip and filter methods

  • Espresso (for a sweeter, more forgiving profile)

  • Anyone who wants balance without intense acidity or bitterness


Dark Roasts: Bold, Rich & Intense

How They’re Roasted

Dark roasts remain in the roaster through and sometimes past the second crack, reaching 225°C+.
At this stage, oils move to the surface, beans become darker and lighter in weight, and roast flavours dominate.

How They Taste

With darker roasts, caramelisation is strong and origin character becomes less pronounced.

Typical notes:

  • Dark chocolate, cocoa, smoky or roasted tones

  • Caramelised sugars

  • Low acidity

  • Full-bodied, bold flavour

Best For

  • Espresso machines

  • Moka pots

  • Latte and cappuccino drinkers who prefer strong, robust flavours

  • Fans of traditional Italian-style coffee


What Happens During Roasting? A Quick Breakdown

Roasting is a chemical transformation. Here’s what changes at each stage:

Drying Stage

  • Beans lose moisture

  • Grassy aromas fade

  • Temperature begins increasing steadily

Maillard Reaction

  • Amino acids + sugars react

  • Caramel, chocolate and nutty flavours start forming

  • Colour shifts from green to yellow to light brown

First Crack

  • Pressure builds and beans pop

  • Light roasts typically stop here

Development Stage

  • Roasters control how flavours deepen

  • More caramelisation = more sweetness

Second Crack

  • The bean structure fractures

  • Oils appear

  • Dark roast territory

Every second counts, even a short development change can dramatically alter the flavour.
