What Is “Roast Level”?
Roast level describes how long and how hot green coffee beans are roasted.
As beans progress through the roast, their colour, density, flavour and aroma all change.
Generally, roasts fall into three categories:

But within those are subtle gradients, and each one tastes unique.
Light Roasts: Bright, Complex & True to Origin
How They’re Roasted
Light roasts are heated until just after the first crack, a popping sound made as moisture escapes and the beans expand.
Temperatures typically range from 195°C to 205°C, and the bean remains relatively dense and dry on the surface.
Roasters stop the process early to preserve delicate acids and the coffee’s natural characteristics.
How They Taste
Light roasts highlight origin flavours, what the bean naturally offers based on variety, altitude, and processing method.

Medium Roasts: Balanced, Sweet & Versatile
How They’re Roasted
Medium roasts develop slightly longer, hitting higher internal temperatures, usually 210°C to 220°C, but stopping well before second crack.
At this stage, sugars begin to caramelise more deeply, balancing acidity with sweetness.
How They Taste
Medium roasts tend to be smooth, rounded, and flexible.

How They’re Roasted
Dark roasts remain in the roaster through and sometimes past the second crack, reaching 225°C+.
At this stage, oils move to the surface, beans become darker and lighter in weight, and roast flavours dominate.
How They Taste
With darker roasts, caramelisation is strong and origin character becomes less pronounced.
