There are two main methods of making instant coffee:

The best decaf (like our Noctis) uses natural methods such as the Swiss Water Process, which removes caffeine using water and filters, no harsh chemicals involved.

This keeps the bean’s original character intact, so you still enjoy the deep chocolatey or nutty flavours, just without the jitters.
